Sri Lankan Red Rice Country Style

Sri Lanka harvests mainly red rice which is a grain that has a richer, earthier flavor than brown or white rice. Native cuisine incorporates boiled red rice into many of its dishes, and balances the strong flavor of the red rice with the sweetness of the coconut for a distinctive taste.

  • 2 cups of Sri Lankan red rice
  • 3 cups of water
  • 1/2 tsp of salt

Add to a large saucepan and stir the ingredients together, setting the heat to high. Wait until the water starts to boil, then reduce the heat to the lowest setting. Place a lid onto the saucepan and heat the rice for 20 to 30 minutes or until it is softened.

To make a creamier version, pour in 2 cups of first extract coconut milk, stirring the milk gently into the rice and heat uncovered for approximately 10 to 15 minutes, or until the milk soaks into the rice.
